Butter Lettuce

Butter lettuce has the large green and thick leaves with loose heads. It has a sweet and bitter smell, or you can say a sweet and tart flavor.

These are originated from Mediterranean basin and have other varieties too, which are Bibb and Boston lettuce.

As the name suggests, Butter Lettuce is very soft and tender, therefore can easily melt in the mouth.

Highland beef salad

  • 10 ½ oz fillet steak

  • For the dressing, take a pestle and mortar and put the chili, garlic and palm sugar into them. After grinding it for maximum 2 minutes and adding mint and coriander for an additional minute.

  • Now mix it in soy and fish sauce along with lime zest and juice.
  • In a bowl keep the lettuce after cutting it into six wedges. You can top it with coriander leaves and radishes. Now, pour the dressing over the salad and after that slice beef on the top of it after tossing it to coat.

  • One chopped onion
  • 1 or 2 large butterhead lettuce
  • A little butter or olive oil
  • 1 L good chicken or vegetable stock
  • 250 g of frozen or fresh peas
  • 5-6 fresh lovage leaves
  • Salt and pepper as required

For tomato ketchup

  • 250 ml red wine vinegar

For fennel and radish salad

  • One lemon (only juice)
  • Five sliced radishes
  • One thinly sliced head fennel on a mandolin
  • 2-3 tbsp extra virgin oil

Method to prepare

  1. For preparing the tomato ketchup, first heat the vinegar, bay, add spices and sugar in a pan until simmering
  2. Add the remaining ingredients and stir it and do not let it stick to the pan.
  3. Now, reduce the temperature to simmer and cook it for another 30 minutes stirring it occasionally.
  4. Put the mixture in a Blender and blend it until it smoothens, after that push the ketchup through a sieve.
  5. Now, for the fish bites, fill a large deep and heavy-bottomed pan2/3 full of vegetable oil. Keep it to heat at 180C.
  6. Alongside, mix sugar and yeast in another bowl. Pour the vinegar, beer and whisk in the flour, add salt to it. Leave that for fermenting. When the mixture starts to bubble, then we know that it is ready to use.

  8. Now, take the batter and dip the fish into it, deep fry it for 3-4 minutes (till it turns golden brown). Also, don’t forget to remove the slotted spoon and drain on the kitchen paper.
  9. For making the salad, all you have to do is to mix all the ingredients.
  10. Now for the serving, take a greaseproof paper and put the fish bites in it along with the salad and ketchup.

Chicken lettuce wraps

  • One tsp of olive oil
  • Two cloves of minced garlic
  • 1 pound ground chicken
  • ¼ cup of hoisin sauce
  • 1 tbsp of rice wine vinegar
  • 2 tbsp of soy sauce
  • One tsp of Sriracha
  • 1 tbsp grated ginger
  • Kosher salt and ground black pepper to taste
  • One head butter lettuce
  • Two thinly sliced green onions
  • 1 Can of drained sliced water chestnuts
  • One white onion (small)

Method to prepare

  1. In a large non-stick skillet add olive oil and ground chicken, now fry and crumble it until it turns brown in a medium-high heat to drain any fat.
  2. After that, stir in onion, garlic, hoisin sauce, followed by soy sauce, ginger, rice wine vinegar, and Sriracha for 1-2 minutes until the onions become translucent.
  3. Stir in green onions and chestnuts for about 1-2 minutes until they become tender. Season them with the pepper and salt to taste.
  4. Now put some chicken mixture into the center of the lettuce leaf.
  5. Now serve and enjoy.
